What you'll need...
​​​​​​1 jar roasted red peppers,  drained
1/2 red onion
1/2 cup unsweetened almond milk
2 tbsp tahini
1/2 cup nutritional yeast
pasta of choice (1 cup of the water saved for the sauce later)
olive oil
1 tsp garlic powder
salt + pepper
Here's how to make it!
1. Cook the pasta al dente to package directions.
2. While you wait for the pasta, quickly chop and sauté the onion till its caramelized.
3. For the sauce, add the peppers, caramelized onion, almond milk, tahini, nutritional yeast and garlic powder to a food processor and pulse until creamy. If you need to thicken the sauce, add little more tahini,  if you need to thin it out add some reserved pasta water.
4. When you get a consistency you like for the sauce, add salt and pepper to taste and coat the pasta after its been drained.
